BUTTERED RUM MARSHMALLOWS
About 2 dozen 1 ½-inch mallows
the bloom
4 ½ teaspoons unflavored powdered gelatin
⅓ cup cold water
1 tablespoon dark rum (80 proof)*
the syrup
½ cup lightly packed dark brown sugar
½ cup granulated sugar
½ cup light corn syrup, divided
¼ cup water
3 tablespoons dark rum
½ teaspoon salt
the mallowing
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter, soft and well- stirred
½ cup Classic Coating, plus more for dusting
